Like beets, squash is not a freebie when it comes to low carb eating. But if you’re craving carbs or want a substitute for regular carbs (ie. pasta, rice, bread), squash is a good choice.
My favorites are acorn and butternut. They are very easy to prepare:
– cut in half and scrape out the seeds
– score with a sharp knife
– wrap in aluminum foil
– bake on cookie sheet at 350 degrees for 60-90 mins, depending on size
– add some butter and maple syrup
