Low Carb Recipe – Cauliflower and Goat Cheese Gratin

CAULIFLOWER_GOAT_CHEESE_GRATINAs I’ve recently reported, I’m eating low carb (or at least lower carb) and I thought I’d share some of the recipes I’m making.

This is one of my favorite dishes. It’s hearty and makes a great substitute for the carbohydrate I always used to serve when putting together a meal. Sometimes I eat if for my lunch. Per the rules in Jorge Cruise’s The 100 this qualifies as no carbs/sugar calories! That’s not to say there aren’t any calories in it. 😉 But I’ve been following the diet, more or less, for a few weeks and I can tell I’m losing weight. One of these days I’ll actually get on my scale to confirm.

The recipe is one of Bobby Flay’s and I got it off of www.foodnetwork.com:


  • 1 head cauliflower, cut into small florets
  • 2 cups heavy cream
  • 1/2 pound Monterey Jack cheese, coarsely grated
  • 2 cups grated Parmesan
  • 6 ounces goat cheese, cut into small pieces
  • Salt and freshly ground pepper
  • Nutmeg (optional)


Preheat oven to 400 degrees F.

Layer the cauliflower, heavy cream, and the 3 cheeses in a medium casserole dish.  Season with salt and pepper. Roast for 20 to 30 minutes or until the cauliflower is soft and the sauce has thickened slightly. Remove from the oven and let rest for 10 minutes before serving. I like to sprinkle a little nutmeg on for additional flavor.
