I just got back from a girls’ getaway in Santa Fe and I definitely did NOT save any money while I was away. But, I DID wear the dresses I bought, had a lot of fun and some wonderful meals. Thank goodness I don’t have to weigh myself until next Friday!
Anyway, it’s time for a little austerity, now that I’m back. So, in that spirit, I made my famous Macaroni, Cheese and Tomato Sauce. My grandmother made this for my mother. My mother made it for me. And, now, it’s a favorite in our house – despite being about the cheapest and easiest meal around. It costs about $2.00* not counting an accompanying vegetable.
Macaroni, Cheese and Tomato Sauce
Cook a 1 lb package of macaroni. While it’s cooking, grate about a cup of cheddar cheese and open a can of tomato sauce. Drain macaroni. Stir in cheese until it’s melted and well blended. Stir in can of tomato sauce. Voila! Kids love it. So do husbands.
* now that I can buy the pasta for 49¢, the cost is closer to $1.50
